What It Means to Be Gluten-Free

As more people become aware of gluten allergies and alternative diets, gluten-free foods are becoming more common on the grocery shelves and even on restaurant menus. So what exactly does it mean to be gluten-free?

What Is Gluten?

Gluten is a protein found in wheat, barley, rye, oats, spelt and kamut. It can be found in bread, pizza, pasta and many processed foods; most American foods contain gluten. For many people, gluten can be the cause of serious health complications such as celiac disease – a digestive disorder that, when consuming gluten, can affect the way the body absorbs nutrients and result in life-threatening nutritional deficiencies.

Avoiding Certain Foods

One way to treat celiac disease is through a gluten-free diet. People who live gluten-free must avoid foods that contain or have been processed with gluten. Unless made without gluten and labeled gluten-free, these foods include beer, breads, cakes, cereals, salad dressings, pastas, certain soups and sauces, French fries, processed lunch meats and more. In addition, products such as food additives, medications and Play dough may contain gluten.   

Cross-Contamination

Even though a food may be free of gluten, just coming into contact with foods that do contain gluten can result in cross-contamination. This can occur during the manufacturing process, as some equipment may be used to process both gluten and gluten-free foods. This is why some foods are labeled “May Contain Gluten.”
